I love brunch on the weekend… dining with friends, live jazz, and a great selection of breakfast and lunch items, hence, brunch! Sometimes, though, it’s just as fun to eat in. This weekend I made a breakfast pizza that turned out so well I had to share.
I did this on a Naan crust, sprayed lightly with olive oil, added fresh veggies, shredded cheese, and a raw egg. Bake at 400 degrees for about 15 minutes. It all depends on how well you like your egg done. I’m a fan of a poached egg, but some of you will prefer it cooked well. Sprinkle with parsley and season to taste. This made two really nice servings paired with fruit. Enjoy!
